Shrimp Skewers Recipe

Serves 3 • Calories: 362 • Protein: 24g • Carbs: 39g


1 pound large raw shrimp,
cleaned and deveined
3 cloves garlic, sliced thin
2 tbsp. extra-virgin olive oil
¼ cup fresh squeezed lime juice
¼ tsp. sea salt
¼ tsp. black pepper
¼ tsp. paprika
¼ cup finely chopped cilantro, for serving 6 large metal skewers
2 cups cooked brown rice


  1. 1. Whisk together olive oil, lime juice, garlic, salt, pepper, and paprika for marinade.
  2. 2. Thread shrimp onto skewers, about 12 to 15 minutes, or until cooked through. Place on a plate. Pour marinade over shrimp skewers.
  3. 3. Preheat oven to 450° F.
  4. 4. Lay skewers on a baking sheet and roast for about 5 minutes, until pink and opaque.
  5. 5. Sprinkle with cilantro and serve over brown rice.
